Veggie feast VI – Broccoli

  • 700g broccoli
  • 1/2 tin sweetcorn
  • 20g anchovies (conserved in oil)
  • 225g king prawns
  • 150g cottage cheese
  • turmeric
  • salt & pepper

Preparation:
Cut the broccoli in large-medium florets and steam it for about 10-15min, until soft. Pour inside a deep oven dish and mash it roughly with a fork. Mix in the sweetcorn, cottage cheese, salt and pepper and turmeric, and when it’s sort of creamy arrange so that there is a hole in the middle. Put the king prawns in the centre, adding some seasoning as well. Finally, dry the anchovies of some of its oil, and put on top of the broccoli mix, around the centre. Bake in the oven for 25min (180-200C), until the prawns are cooked.

  • 400g long broccoli
  • 4 cloves garlic
  • 125g beansprouts
  • 30g spring onions
  • fresh ginger
  • 1 lemongrass stem
  • 100g green pepper
  • Juice of 2 limes
  • Coriander
  • 1tbsp sesame oil
  • white sesame seeds & black sesame seeds
  • soya sauce

Preparation:
Steam the broccoli for about 5-10min, until very slightly soft. Grate the fresh ginger and garlic onto a large frying pan, adding the sesame oil. Turn the hob on, mixing them gently in very low heat. Add chopped spring onions, the lemongrass stem chopped in very tiny pieces, and the green pepper chopped in long thin strips. Stir well, now in medium heat. After another 5min add the beansprouts and keep stirring. Finally, add the steamed broccoli and let it mix with the sauce, for another 10min again, until it’s softer but not falling apart. In the last 5min (or earlier if it becomes too dry), add a few tbsps of soya sauce, and the juice of the two limes. Serve with white and black sesame seeds on top, and plenty of freshly chopped coriander. Hail Yo Goh Veggie.
