Semolina & Almond cookies

These are some delicious, light and easy to make cookies. The recipe is adapted from here.

I definitely did something wrong because the dough was unusable, so I added a good amount of plain flour.

Ingredients

  • Semolina flour 200g
  • Flour 50-80 g
  • Almond flour 130g
  • Baking powder 1 tspn
  • Salt 1 tspn
  • Sugar 100g
  • Lemon zest from 1/2 lemon
  • Eggs 2
  • Oil, mix of oil and sun flour or a bit of salted butter 40 ml
  • Vanilla 1 tspn

Preparation

  • Preheat oven to 180 C
  • Mix semolina, almond, baking soda and salt
  • Mix in this order: Sugar -> Lemon zest -> Eggs -> Oil -> vanilla
  • Pour the flour
  • Cook for 14 to 16 minutes
