These are some delicious, light and easy to make cookies. The recipe is adapted from here.
I definitely did something wrong because the dough was unusable, so I added a good amount of plain flour.

Ingredients
- Semolina flour 200g
- Flour 50-80 g
- Almond flour 130g
- Baking powder 1 tspn
- Salt 1 tspn
- Sugar 100g
- Lemon zest from 1/2 lemon
- Eggs 2
- Oil, mix of oil and sun flour or a bit of salted butter 40 ml
- Vanilla 1 tspn
Preparation
- Preheat oven to 180 C
- Mix semolina, almond, baking soda and salt
- Mix in this order: Sugar -> Lemon zest -> Eggs -> Oil -> vanilla
- Pour the flour
- Cook for 14 to 16 minutes
